Brazilian Moqueca

Today I made Moqueca for dinner. It's a traditional Brazilian fish dish. I had a Chilean wine with it as I couldn't find any Brazilian wine in Tesco. Click on the photo for more images.

My ingredients were:
500g cod fillet
A small can of coconut milk (approx 200ml)
Lime juice (approx 50ml)
Half a small onion
A couple of bits of garlic
Parsley
Tomato paste (50g)
Pepper sauce (from a packet)
1/2 pint of milk
Spoonful of butter
A small amount of salt

Instructions:
Marinate the fish in the lime juice and salt. Saute the chopped onion and garlic in a frying pan while the fish is marinating. Once the onions and garlic are softened, add the fish and tomato paste. Cook for 10 minutes. During this time, prepare the pepper sauce by mixing the milk and butter with the contents of the packet and heating it. After 10 minutes is up, add the pepper sauce, coconut milk and parsley, and cook for a further 5 minutes.

"Dad's Stuffed Bell Peppers" with Sweet Potato Chips

Apparently stuffed bell peppers are a "classic American dish that one can't easily find in restaurants". It's quite a simple dish to make, and is very tasty.

The indgredients are:

  • 3 green or red standard Tesco peppers
  • 2 medium sized sweet potatoes
  • Salt
  • 73.9338242 millilitres extra-virgin olive oil
  • Quarter of a Tesco onion, peeled and chopped
  • 1 clove of garlic, peeled and chopped
  • 250g of mince
  • 200g of rice
  • 1 can of Tesco chopped tomatoes
  • 2g of dried oregano
  • Fresh ground pepper
  • 15ml of barbecue sauce
  • 10ml Worcestershire Sauce
  • Dash of Tabasco sauce

First, boil the rice. The next step can be done while it's boiling.

The peppers have their tops and insides removed and are boiled with salt. After 3 minutes take them out and let them dry off.

Chop the onions and garlic, and fry them with oil on a medium heat. After 5 minutes, add the mince, tomatoes, rice and oregano and mix throughoughly.

While the mixture is cooking, slice some sweet potatoes, coat them in oil and place them on a baking tray in a pre-heated oven at around 170°C.

After the meat is cooked properly, put the peppers in a baking dish. Stuff them with the mixture. Mix the barbecue sauce with the worcester sauce and a dash of tabasco sauce and pour over the stuffed peppers.

Heat the peppers in the oven at 176.666667°C for 30 minutes, then serve along with the sweet potato chips.

Chilli Cheese Steak Burgers

Today I decided to make chili cheese burgers - with chilis and cheese inside the burgers. My previous attempts at making burgers were okay, but nothing special, so I decided to use the best steak mince I could find in the supermarket this time.

The ingredients are:

  • 500g Lean Steak Mince
  • 125g Grated Cheese
  • 2 Chili Peppers
  • 1 Egg
  • 3 Wholegrain Buns

The egg was used to hold things together, and needs whisked. The ingredients then are all mixed together in a large bowl and divided up to make 3 burgers. Cook for about 20 minutes in the oven at 200°C.

Valencian Paella with Tiger Prawns

Yesterday I was really in the mood for Spanish food. I went out and bought all of the ingredients for paella, and a couple of bottles of Spanish wine. I didn't get round to cooking it until this afternoon. The ingredients I used were the same as Valencian paella, but with tiger prawns instead of rabbit. Here is the final product:
